One café in Erbil in 2009, and everything that grew out of it: a buying desk that sources anything legal inside Iraq, five services for restaurants, and contract catering for the people who never get to leave the building.
Shalyar General Trading & Restaurant Services is a hospitality group built around a simple idea — that supply, kitchens and service should answer to the same standard.
Most operators assemble that standard from a dozen separate vendors: one for produce, another for equipment, a consultant for the fit-out, an agency for the staff. Every handover between them is a place for the standard to slip. We removed the handovers.
Today the group runs three divisions — general trading, restaurant services and cafeteria management — sharing one supply chain, one training standard and one point of accountability. A client can take all three or any one of them, and get the same discipline either way.
Trading first
Shalyar began by supplying kitchens, dry goods, produce and packaging on a schedule operators could plan around.
Into the kitchen
Clients who trusted the supply line began asking us to design, equip and open the kitchens themselves.
Feeding at scale
Khayri Shalyar followed, taking the same discipline into daily contract catering for workforces.

Judged from the table
The café taught the standard the rest of the company is held to: not whether the order was delivered, but whether anybody wanted to stay.
One accountable partner
Buying, restaurant services and daily catering under one roof, so the responsibility never falls between two contractors.
Standards on paper
Specifications, recipes and hygiene checks are written down, which is the only way they survive a change of staff.
Inside Iraq, on purpose
We buy from suppliers we will face again next month, in the same market and the same currency as you. Nothing crosses a border, so nothing sits at one.
General Trading
You tell us what to buy. We buy it, anywhere in Iraq.
Restaurant Services
Supplied, managed, staffed or fed, whatever the room needs.
Khayri Shalyar
Feeding a workforce, every shift, without drama.
Send us the scope, a supply list, a site, a headcount, and we will come back with something specific.
